made using traditional
culinary techniques in our
own central kitchen. We use
only premium natural
ingredients like Italian olive
oil, Italian Parmigiano
cheese and local dairy products. Our meat, poultry and seafood are sourced from the same purveyors to the finest
dining establishments, and all of our produce is hand selected. We spend
more on our ingredients and make the extra effort because that is the
only way to produce a superior tasting, quality product we are proud to
serve. By the way, we don't use dry herbs, artificial flavors,
preservatives, colorants, MSG, trans-fat, or anything else we wouldn't
eat ourselves or serve to our friends and family.
When it
comes to the pasta, we don’t batch cook and re-heat, which is a common
industry practice. Instead, we use our own innovative and proprietary
machines to cook individual portions of pasta in 3 minutes. This
technology enables us to custom cook each order, perfectly al-dente,
fresh every time, from the first order of the day to the last. Batch
cooking and re-heating often result in overcooked, bloated and slippery
pasta that is unable to grab the sauce as the starch is washed away
during blanching. Our freshly cooked pasta is always served piping hot
and richly coated with our delicious sauces, delivering our guests a
unique pasta experience that is on par with the finest Italian
